Mandarin Jelly

- ✓ 90 g cornflour (corn starch or potato starch)

For a more intense flavour, toss in a strip of mandarin peel during cooking and remove it before setting. You could also swap a portion of the mandarin juice for sweet orange juice for a milder taste, or stir in a teaspoon of mandarin liqueur for an extra aromatic twist.

- • Keep the jelly refrigerated, covered with cling film, for up to 3 days. It’s not suitable for freezing, as the delicate jelly texture would be compromised.
