Wash the spinach thoroughly and boil for about 5 minutes in salted water. Drain well and squeeze to remove excess moisture.

Mix until you have a uniform mixture, then shape small fritters with your hands.

For a lighter version, bake the fritters in a fan oven at 180ยฐC for 20 minutes, turning halfway.
You can replace part of the bread with mashed boiled potatoes for an even softer interior.
